Is there anything better than home made chicken soup? Especially when you aren’t feeling 100%.

This chicken soup recipe is full of gut healing gelatin, along with garlic, onion and other herbs which are anti-microbial and anti-inflammatory.

Ingredients:

6 serves

  • 6-8 chicken drumsticks (can use chicken wings as well)

  • 2 x brown onions, roughly diced

  • 200g pancetta or bacon

  • 1 stalk of celery, roughly diced

  • 2 x carrots

  • 1 x medium zucchini

  • 1 lemon + zest

  • 4 x garlic cloves

  • 1 Tbsp. freshly grated ginger

  • 2 Tbsp. of fresh rosemary or 1 Tbsp. dried

  • 2L of filtered water

  • 2 Handfuls of parsley, roughly chipped

  • Salt and pepper to taste

Method:

  1. Brown the chicken drumsticks in casserole dish. Set aside

  2. Add a splash of olive oil and cook onions, pancetta, and celery for 10 mins or until onion is browned/transparent.

  3. Add garlic, ginger and lemon zest.

  4. Add chicken back in the dish, with the celery, and 2L of boiled filtered water. Bring to the boil, then simmer with lid on for 2-3 hours (depending on how much time you have)

  5. Add carrot and zucchini, 1 hour to go.

  6. Pick out bones and cartilage from soup.

  7. Squeeze in juice of lemon, add parsley and salt and pepper to taste.

OPTIONAL: Serve with rice noodles if you want to make it a little hearty, or a slice of sourdough with a good chunk of butter.
