Mexican beef recipe

This Mexican beef bowl recipe is a great family weeknight meal. Beef chuck is a cheap cut of meat, making it an affordable choice for the family. Beef is nutrient dense, rich in iron, B vitamins, zinc. When cooked low and slow, this piece of meat should be tender & falling apart.

This should serve approx. 6 people.

INGREDIENTS

  • 2 Tbsp Olive oil

  • 800g-1kg of chuck beef (organic is best)

  • 1 onion finely chopped

  • 4 x garlic cloves finely chopped

  • 1/2 cup orange juice

  • 1 x 400g tinned tomatoes

  • 1 x packet taco seasoning from mingle

  • 1 cup bone broth

  • 1 400g tinned black beans- rinsed

  • Salt + pepper to taste

METHOD

  1. Chop beef into 4 pieces

  2. Rub beef in mingle spices

  3. Add olive oil to heavy bottom saucepan, place on medium heat. Brown off meat. Once finished, place to the side.

  4. Add a little more olive oil into the pan and sautee onion & garlic for 3 mins until softened.

  5. Add orange juice to deglaze the pan.

  6. Add tinned tomato, bone broth, the meat back into the saucepan. Turn heat to low, put lid on and let it simmer gently for 2 hours.

  7. Take the lid off, add black beans and let it simmer for another 30 mins.

  8. Season with salt and pepper to taste.

  9. Serve as a mexican bowl with cooked rice, cabbage slaw, tomato salsa, guac & coriander & pickled onions.
