Gut healing Osso bucco recipe

Is there anything better than a slow cooked meal on a chilly winters night?

Osso bucco is one of those meals that are full of nourishment & good for the soul. Osso bucco is beef shin, packed with essential amino acids, rich in collagen, and high in nutrients such as iron, zinc, B12, and folate. Serve with pasta, mashed potato or cauliflower, rice or risotto. You may want to double the recipe so that you have leftovers.

SERVES 4

INGREDIENTS

  • 1kg Osso bucco

  • 2 Tbsp olive oil or ghee

  • 1 x brown onion, diced

  • 3 x garlic cloves, crushed and sliced

  • 1 x small carrot, diced

  • 1 x celery stick, diced

  • 1 Tbsp dried thyme

  • 2 x bay leaves

  • 1 x Tbsp tomato paste

  • 1 x tinned tomatoes

  • 1 cup dry red wine (can swap out for more stock)

  • 1 cup bone broth or stock

  • Salt and pepper to taste

METHOD:

  • Add 1 tbsp oil/ghee to pan and brown both sides of occo bucco on medium to high heat. Place in slow cooker

  • Add other 1Tbsp of oil/ghee to pan, and sweat down onions, garlic, celery and carrot for 8-10 mins or until onion is translucent. Stir occasionally.

  • Add tomato paste, tinned tomato, red wine, broth, thyme and bay leaves to the pan and cook for 1-2 mins.

  • Add to slow cooker with salt and pepper and cook on low for 8-10 hours or until meat is falling off the bone. Don’t forget to scoop the marrow out of the bone- its full of nutrient dense fats.

  • Serve with pasta, mashed potato or cauliflower, rice or risotto.
